“ After a six-hour drive from the South of Greece into the quiet mountain village of Sidirochori in Northern Greece, we found ourselves standing in what felt like a ghost town... a few cats, a wandering dog, and not much else. With our hotel’s restaurant closed, Google Maps led us to a small taverna called Sistebo. Little did we know, we were about to embark on one of the most unforgettable culinary journeys of our lives. Inside, we were greeted by Maria, the heart and soul of the place. She is not only the owner but also the cook, the server, and, together with her husband Dimitris, the keeper of an experience that can only be described as pure hospitality. The evening began with homemade wine, unlike anything I’ve ever encountered in my almost seven years of working in gastronomy. The first glass, pitch black and opaque like Coca-Cola, carried none of the rough acidity that often comes with village wines. Instead, it was smooth, fruity, and full-bodied almost like grape jelly stripped of its sweetness. It was so refined it could easily belong in a Michelin-starred restaurant. As for the food, there is no menu here. Maria simply tells you what she has, and if you want something different, she’ll cook it for you the next day. "I can cook you guys whatever you want!" Do i need to add anything here? That alone sets the tone for the kind of place this is. We started with eggplant salad, saganaki, and tzatziki. The eggplant salad was smoky, rich, and 100% the best eggplant dish I’ve had in my 2 years in Greece. The saganaki was a far cry from the lifeless fried cheese you might get in Athens: crisp on the outside, melting and flavorful within, almost certainly from local cheese. The tzatziki was flawless, creamy, balanced, and drenched in golden olive oil. Then came the mixed grill plate - the main event. Each piece of meat was a masterpiece in itself: The Soutzouki, a small bifteki-style beef patty, juicy and charred to perfection. Pancetta, so tender and flavorful that we were convinced the animal had been alive only hours before. We were just starring at each other after every bite, smiling and shaking our heads in disbelief. Then the Village sausage, a marvel of texture and flavor, with herbs that reminded me of a comforting bowl of ramen laced with vegetable broth. I know i used a lot of Superlatives already but: Truly the best sausage I’ve had in Greece. Every Taverna i ever visited usually has something outstanding and the rest was okay or solid. Here every little bite was outstanding. For dessert, Maria surprised us with two creations. First, a Balkan classic reminiscent of Bosnian “Čupavci”- a simple but comforting chocolate cake. The second was something extraordinary: a layered treat with a syrup-soaked biscuit base, a light, yoghurty cream (far more delicate than mascarpone), and a topping of liquid peach marmalade. It felt at once local and cosmopolitan, something you might stumble upon in a Paris café or Venetian pasticceria. We paired it with the semi-sweet version of the house wine, brighter in color, lightly sweet, and equally stunning. The entire evening was wrapped in silence. We were the only guests, the windows framing the serene mountain village where only a few old men sat outside, sipping wine and enjoying life. There was a stillness, a simplicity, and a sense of timelessness that made every bite taste even more profound. Sistebo is not just a Taverna - it is a reminder of what food and hospitality are meant to be: honest, soulful, and deeply human. If Anthony Bourdain were still with us, he would have called this place heaven on earth. We left with full stomachs, touched hearts, and a promise to return the very next day. Thank you, Maria.
